I’m pretty sure the squirrels have been stealing my apples, because the biggest branch of my tree is mysteriously bare. Regardless, I managed to wrangle up enough apples today to make one of my all time favorite desserts: apple crisp. I use my grandma’s recipe because it is extra buttery and crumbly and yummy.
To start, peel and slice all of your apples. Try to make your slices evenly sized so that they will all cook at the same speed (using an apple slicer like this one makes this super easy). Place the apple slices in a baking dish that is no bigger than 10″ (round or square, doesn’t matter).
Mix together the granulated sugar, cinnamon, and flour. Sprinkle this mixture over the top of your cut apples and toss to combine.
Side note: If you are using very tart apples (like Granny Smith) you have two options: either double the amount of granulated sugar, OR sprinkle your apples with a teaspoon of baking soda before coating them with the cinnamon mixture. Baking soda will help to minimize the tart flavor of the apples, hence making them sweeter without piling on the sugar.
Next, combine all other ingredients until you have a crumbly streusel mixture (Yum! This is the best part!). Layer this evenly over the top of your apples. DO NOT MIX the streusel topping in with the apples; you want a thick layer of this buttery goodness on top, trust me.
Finally, let your apple crisp bake for 45 minutes. Then, pull out the vanilla bean ice cream and eat your heart out.
To store, cover with plastic wrap. The apple crisp will technically keep longer in the fridge, but it’s completely safe to store it on the counter for a few days too. You can easily reheat individual servings in the microwave over the next few days, which is great because apple crisp is best served warm. I hope this becomes one of your fall favorites too!
- 6 large apples (or 12 small apples)
- ½ cup granulated sugar
- 1 tablespoon flour
- 1 teaspoon ground cinnamon
- 1 cup quick cooking oatmeal
- 1 cup flour
- 1 cup packed brown sugar
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ cup butter, melted
- Preheat oven to 350 degrees.
- Peel, core, and slice apples. Place in a baking dish.
- Mix together ½ cup granulated sugar, 1 tablespoon flour, and cinnamon in a small bowl. Sprinkle the mixture over the sliced apples and toss to combine.
- Combine the remaining ingredients in a bowl and mix until crumbly. Top the sliced apples evenly with the crumbly oatmeal mixture.
- Bake for 45 minutes. Serve warm.
